I have read that storing garlic in oil at room temperature can be very dangerous because of the risk of botulism, so maybe it’s better to keep this sauce in the refrigerator?

Since there is enough oil on the surface, it can be kept in room temperature. Fridge keeping is better. It can be kept for quite a long time up to 1 month.
