I make this dish on the regular! I intentionally buy pork butt when it goes on sale, and cut it down into smaller (usually 8oz pkgs), and cryo-seal them so I can whip this up whenever I like! I play around w/the mushrooms depending on what’s looking best at the market, but I always add reconstituted black mushrooms. I’ve added fresh bamboo when it was in season as well. One of the absolute best pork stir-frys I’ve ever had (or made!). LOVE!!

Best stir fry I have made. I was using belly pork and oyster mushrooms (not because I think I’m smarter than you, only because it is what I had in the fridge) and used sake instead of water in the marinade as it works well with pork belly. I also threw in some chopped bok choy because I needed to use it. Just fantastic!

I have cooked a lot of Chinese and this is by far one of my favorites! I had gone to the local farmers market and bought king oyster mushrooms and lions mane so that is what I used. I have printed this recipe so I can refer back to it as I will definitely make this again! Thank you so much for sharing!
