I made this recipe, I substituted cauliflower and slivered potatoes for the celery because I wanted to use it up, and it was awesome. Super delicious. I used lacto fermented Hunan style pickled red chilies that I made, and I think that’s what gave it an amazing flavor.

In most cases, I use tenderloin because it is much easier to buy and cheaper.
