This was the flavor I was looking for! The black vinegar did beg for more sugar however. I always taste the sauce to see if the flavors match up well, so added 1 more tablespoon. Anyway, I will repeat this one again! Thank you!

So delicious, and not too difficult to make. Definitely get the long eggplants if you can find them, they really are different than the big round ones. And serve them with rice or noodles, you’ll want to soak up every last bit of the sauce!
